Stir-fried rice with tuna and sweet, tangy pineapple.
1 – 184 grams Century Tuna Chunks in Vegetable Oil, drained,
reserve oil for sautéing
2 teaspoons chopped garlic
1/4 cup carrot strips
1 tablespoon soy sauce
- eggs, lightly beaten
3 cups cooked rice
3/4 cup pineapple tidbits
1/2 teaspoon salt, or according to taste
1/4 cup chopped spring onion
1 egg – scrambled, fried and cut into strips
Using oil from tuna, sauté garlic. Add carrots, then soy sauce. Stir in eggs and cooked for a minute. Add tuna and mix well. Add rice, pineapple, salt and spring onions. Mix well until heated through. Serve immediately with scrambled eggs on top.
Makes 3 to 4 servings.
